2021 Cabernet Sauvignon, Cellar Note
The 2021 growing season unfolded against the backdrop of a typically dry start, with the rainy season of 2020/2021 being brief, resulting in a modestly small crop. The fall harvest, while warm, lacked the extreme heat events that often mark Labor Day, ensuring an even finish to the growing season and granting our Cabernet Sauvignon grapes the luxury of extended hang-time—a crucial element contributing to the wine's quality.
On the nose, the 2021 vintage presents a departure from its predecessor, the 2019 edition, leaning towards a more fruit-forward profile marked by red currants, Santa Rosa plum, and anise. The palate, characterized by well-woven tannins, delivers a mouth-coating freshness that signifies the wine's youthful vibrancy. To fully savor its evolving complexity, we recommend decanting for the first few years.
